Ingredients (to serve four as a side dish or two as a lunch)
2-4 cloves of garlic
As many red chillies as you think you can handle, finely sliced
Thai fish sauce, about a tablespoon
One lime, roughly chopped
One tablespoon of palm sugar
25g peanuts 10-15 dried shrimp
Two tomatoes, roughly chopped
One cucumber, washed and thinly sliced
Two carrots, peeled and thinly sliced 3-4 spring onions, thinly sliced
A handful of bean sprouts
Two tomatoes, roughly chopped

Step-by-Step Guide
Pound the ingredients for the dressing together in a pestle and mortar for two or three minutes until the sauce jus begins to come together. Add the tomatoes then stir through the other ingredients until they are well coated. Tip out into bowls and eat straight away. Serve with extra lime wedges, fish sauce and chillies so that each person can tweak the flavours to their own tastes
