• large bunch of flat leaf parsley, finely chopped
• 1 clove garlic, peeled & grated
• 70g macadamia nuts
• 3tbsp extra virgin olive oil
• 40g parmesan, grated
• salt & pepper
Step by step:
In a pestle and mortar, crush the parsley, garlic and macadamias until you have a thick paste. Add olive oil (and water if you’d like a slightly runnier consistency). Stir in the parmesan. Season to taste with salt and pepper.
